Lean Cuisine's Butternut Squash Ravioli




Let's face it. We all prefer to eat fresh food. But when working a full time job, you sometimes need to just grab something quick in the morning to take to work with you so you have lunch for that day. Lean Cuisine's Spa Cuisine is consistently my favorite frozen food brand and I always try to keep a few in the freezer just for such lunch emergencies. I appreciate that they use whole grains in all their pastas and rices. But most importantly, I love the elegant meals they come up with.

Today I tried the Butternut Squash Ravioli and thought it was absolutely fabulous. The pasta has a light taste but also a richness from the butternut squash filling. The white cream sauce on top looks like it is watery, but actually it is adds just the right amount of creamy taste. Walnuts, snap peas and carrots add crunch and freshness. AND it is all low-calorie and "good" for me. Overall, it's a very satisfying lunch considering it only takes five minutes to make in the microwave!

I just tried this. It is, indeed, SO GOOD. One of the best Lean Cuisine meals I've tried. I was imagining this would be sweet, but not at all. Its very savory, and the butternut squash give the same texture and creaminess as ricotta cheese.

I just had this for dinner last night, it was fabulous! The extra veggies made a world of difference, and the generous amount of sauce covered everything nicely. Yummy!

I found your site after doing a Google search for Lean Cuisine's Butternut Squash Ravioli. I tried it once and loved it, too. When I went back to buy more during my local Shop Rite's sale, I couldn't find any. I thought it was just a fluke. THREE Shop Rite's later I'm starting to panic. Could it be really popular or just discontinued, already?!:(
