It's the bread recipe that's the deal--even down to using real palm fronds inserted into the bread surface when baking and remove afterwards to give the traditional slash to the top of the bread. You may have discovered this since the time of your posting--I haven't yet read your other posts. I do remember going to a Greek restaurant where their specialty was stone crab, big white building?
